What size fly would be appropriate for saltwater fish (red drum and speckled trout specifically)?

from a size 4-2/0 should work well. a shrimp pattern ,or one similar to a mickyfin,using a kelly green to an olive green over pearl crystal flash would mimic needle fish quite well
